Mixed Berry Pavlova

My son loves Macaroons.  I can not make even one macaroon turn out nicely.  It’s impossible!  What I can do is make a dessert that is basically a “sheet pan” dessert that lets my Kitchen Aid Mixer do all the work!  A Pavlova is a fancy looking dessert named after the famed Russian Ballerina, Anna Pavlova.

Pavlova, the dessert, is very similar to a macaroon where it has a slightly crisp shell with a chewy inside that tastes like a sweet marshmallow (although my son thinks it tastes like a light version of cotton candy, um – no!) with whipped cream and berries on top.

This dessert is so simple to make and very impressive looking when serving.  Make sure to plan well ahead to make this dessert because the cook time for the meringue is 90 minutes plus another 30 to cool down.  Most ingredients you probably already have on hand.  I prefer to make it with frozen mixed berries because I can add sugar to them and get a tasty “juice” to drizzle over top.  Truly, any berries, fresh or frozen, will work well.  I have even made it with a key lime curd for a sweet and tart Summer treat.  Change to figs or dates for a more Wintertime dessert.

A Beautiful Dessert that tastes just like a Macaroon with Fresh Berries and Whipped Cream.

 6 Egg Whites
 1.50 cups Sugar
 1 cup Heavy Whipping Cream
 1 cup Powered Sugar
 1 tsp Vanilla
Toppings
 2 cups Any type of Berry: Fresh or Frozen (thawed)
 2 tbsp Sugar

Preheat Oven to 250 degrees.
Line your sheet pan with parchment paper.

Beat the 6 Egg Whites in a mixer on high until it just starts to form stiff peaks.

Add 1 1/2 cups of sugar, slowly, letting it incorporate fully.

Beat, on high, until smooth and glossy. It should form stiff peaks and hold it's shape.

Carefully spread out the egg and sugar meringue on the sheet pan. It should not be spread smooth and thin. Let the meringue form peaks along the side to give it a "messy" look.

Bake for 1 1/2 hours. When finished, leave the oven door slightly open and let the meringue cool down slowly in the oven.

Meanwhile, toss the Berries in the 2 tbsp of Sugar. Let sit until ready to serve.

Just before serving, make the Whipped Cream by pouring the Heavy Cream in a mixing bowl with the Vanilla and Powered Sugar.

Whip until soft peaks start to form.

Spread the Whipped Cream over the cooled Baked Meringue.

Drizzle some of the liquid from the Berries over the Whipped Cream.

Arrange the Berries on top and Serve.
