It is one of those Lazy Loafing Leftover days at the Campground. I always try to keep egg roll or wonton wrappers in the fridge to use up our leftovers. They are great for a quick and easy dessert too! When I was a kid, I remember our local grocery store started stocking wonton wrappers. I was fascinated by them but never bought a pack. Fast forward to today and they are a staple just like having pasta and a jar of spaghetti sauce is a staple in our pantry.
Eggroll/Wonton wrappers are so easy to use. You literally fill them up, wrap them up and fry or bake them. We loved them fried but are counting calories and bake them to make them slightly more healthier.
So, looking at the leftovers in our fridge, I had two chicken breasts, four hotdogs, lunchmeat ham, a jar of orange queso cheese, chili and swiss and bleu cheeses. Instantly, I knew I was making Buffalo Chicken Eggrolls when I saw the half empty bottle of buffalo sauce. We love West Virginia Chili SlawDogs so why not put most of it in an egg roll wrapper. My third option was to put carmelized onions, sauteed mushrooms, mozzerella cheese and pizza sauce in a wrap to make a vegetarian option… but the Ham and Swiss Cheese option sounded so much more tastier!
To make these seriously easy, have your chicken and hot dogs already cooked. We grill up a couple of chicken breasts with generic seasoning and keep it in the fridge for leftovers. Same thing for the hotdogs. When you are ready to wrap up your Eggroll wrappers, it’s just an easy chop, mix and spread on the wrapper.
Bake these at 400 degrees for 12 to 15 minutes. Garnish as desired!
For the Buffalo Chicken: chop up two chicken breasts, add 1/2 cup of Buffalo Sauce (more if you dare!), place mixture in the middle of the wrap, sprinkle on blue cheese crumbles and wrap it up!
For the Hotdog Chili Cheese: chop up two hotdogs into bite size pieces, place in the middle of the wrap, cover the hot dogs with chili, add shredded cheese on top and wrap it up!
For Ham and Cheese: take two slices of thinly sliced deli ham and two slices of swiss cheese and roll up together, place in the middle of the wrap and wrap it up!
