Strawberry Pie Filling Bars

It’s my way of cleaning out the pantry of some of those really bizarre purchases like wasabi olives, spicy cranberry pecan salad topping and a couple of the multiple flavors of mustard that I seem to collect.  But, I also throw in the box pie filling, cake mix and small containers of flour and sugar.

When we go on an extended camping trip (a week or more), I grab a big plastic bin, open up my pantry and start randomly putting stuff in the bin. It’s my way of cleaning out the pantry of some of those really bizarre purchases like wasabi olives, spicy cranberry pecan salad topping and a couple of the multiple flavors of mustard that I seem to collect.  But, I also throw in the box pie filling, cake mix and small containers of flour and sugar.

I am not the baker in the family but once we go camping, I always get in the mood to bake something up. The boys are golfing so I always have time to whip up a sweet treat. Although baking is an exact science, I tend to remember a lot of my grandmother’s recipes and modify them. I also have a couple on my cell just in case my memory fails me. One of the recipes I love to modify is her Canned Pie Fruit Bars. She used to use Blueberry Pie Filling but I use whatever I have on hand.

Strawberry Pie Bars

This recipe is easy to make but does take step-by-step mixing.  If doing at home, put the ingredients in your KitchenAid and it’s crazy easy. While camping, I just hand mix.

The result is a slightly chewy shortbread type of crust with sweet pie filling on top. A fabulous Summer treat.

A Tasty Treat Using Canned Pie Filling

Yields9 Servings

 ½ cup butter, softened
 1 cup sugar
 2 eggs
 1 tsp vanilla extract
 1 ½ cups flour
 1 pinch salt
 1 Can of Strawberry Pie Filling

Cream sugar and butter together in a mixer or with a fork and spoon.

Add eggs, once a time, beating them into the mixture.

Add in extract and mix well.

Add in flour and Pinch of salt. Mix well until combined. Mixture will become very sticky.

Spread 2/3 of the dough mixture into the bottom of an 8x8 greased pan.

Spread the Pie Filling over top the dough mixture.

Drop the remaining 1/3 dough mixture, randomly, over the pie filling.

Bake at 350 degrees for 45 to 60 minutes. A toothpick in the MIDDLE should come out clean when the bars are completed. Cool before cutting.

Before serving, add fresh sliced strawberries, kiwi or blueberries, add a sugar glaze made with confectioner sugar,add cool whip or vanilla ice cream, or just serve as is!
