Greek Mediterranean Mixed Salad

This Mediterranean Greek Mixed Salad is filled with flavor, texture and healthy ingredients.  Take this basic recipe and add in your favorite items like salami, cucumbers or tuna.  Not a fan of Greek Dressing?  Try Italian or Blue Cheese Vinaigrette!

 1 Can of Garbanzo Beans
 1 Can of Sliced, Pitted Black Olives
 1 Can of Artichoke Hearts, Halved
 1 cup Greek Salad Dressing
 1 cup Sweet Tomatoes
 1 pinch Salt and Pepper, to taste
OPTIONAL ADD-INS
 2 tbsp Relish or Chow Chow
 1 Salami, diced or chunked per preference
 1 Sliced Cucumber
 1 Bagged Mixed Lettuce

Open up the Black Olives, Garbanzo Beans and Artichoke Hearts and drain each.

Add the canned items to a large bowl.

Add 1/4 cup of Greek Salad Dressing and salt and pepper. Mix very well! NOTE: This is to taste so if you prefer more Greek Dressing, add a touch more.

Add Sweet Tomatoes. Stir.

OPTIONAL: Add pickle relish, chow chow or similar for a touch of tartness.

If eating now, add Optional Cucumber and Lettuce. Otherwise, I don't recommend adding these two items.

Cover and Marinate for at least two hours. Marinate longer for more depth of flavor.

Add Salami, if preferred.

 Tip:  The Tomatoes and Cucumbers add extra liquid after marinating.  If there is too much liquid, I will drain this Mixed Salad or use a Slotted Spoon to serve.
